Australian Knife | Koi Knives | The "Gyuto" or "Chefs" Knife
Possibly the knife we are most proud of....the first knife we ever made.
The Gyuto is the all-purpose knife - the Japanese equivalent of a chefs knife. You can use it for everything.
The handle wood was sourced from Anderson Hill Winery located in Lenswood, Adelaide Hills. this wine region around 30km east of Adelaide. The vine had to be pulled out due to being fire-affected by the 2019 fires that swept the Adelaide Hills
The Damascus steel (AUS10) comes from its Japanese source, Aichi (not far from Nagoya) and it is finished with an ultra-sharp blade edge to assist chopping and slicing.
