This is the chef's knife crafted by TKC. We use three-layer 440C steel due to its high HRC (hardness based on high carbon) and low corrosion (rustiness).
It's made for anyone who wants hardness matched with the ability to occasionally make a mistake (throw it in the dishwasher or leave it in the sink).
